Following the COVID-19 shutdown, I was part of the leadership team responsible for reopening Pineapple & Pearls and successfully retaining its two Michelin stars in a fundamentally changed operating environment.
The work required balancing standards, team stability, cost discipline, and guest experience — strengthening systems without compromising identity.
